Pumpkin’ Hunting Weekend

I had such an amazing much needed weekend!

Kaienna spent the weekend with us and we went pumpkin hunting in the woods. Instead of going to the pumpkin patch, we decided to buy a pumpkin for Kai and create an elaborate story that there are wild pumpkins that roam the woods and we have to hunt them! We went to the Botanical Garden trails by our house and went in search of this pumpkin with her, creating stories, following the ‘pumpkin tracks’, and following noises (thrown rocks) to find the wild pumpkin! After an hour of walking through the trails, Kai and I separated from Derek while he hid the pumpkin on a log. He called back for us, “Hey guys! I think I heard and saw a pumpkin this way!” We ran over to him and she spotted it perched on a log and speared it!

IMG_2167We had left Derek’s and my pumpkin in the backyard while we loaded up the car before we left. We told her that the mommy and daddy pumpkin might try to look for the little pumpkin. When we got home, Derek moved them to the front door while Kai and I were in my room. He knocked on the door and called us over! Kai was so excited! Mommy and Daddy pumpkin showed up. We carved our pumpkins, giving them faces, bought tea lights, and put them on our front porch. She was obsessed with them! She had to keep checking to make sure they didn’t ‘roll away’. She’s a smart cookie though, she kept asking, “How did they knock on the door?”

pumpkinWe had a great weekend, I’m glad we had a chance to do Fall activities since we don’t have her next weekend for Halloween. She’s such a sweet girl, I feel so lucky and honored to watch her grow and be a part of her life 🙂

Jumbo Frosted Pumpkin Cupcakes!

O my god, I saw these on FitnessRx for Women and I am GOING to make these! They look absolutely scrumptious! Greek God’s Honey Yogurt would be delicious as frosting on these:

Jumbo Frosted Pumpkin Cupcakes!

Scrumptious, can’t wait to sink my teeth into one of these!

“JUMBO FROSTED PUMPKIN CUPCAKES”

Ingredients:

  • 1/3 cup canned pure pumpkin
  •  1 small banana, mashed
  • 2 TB unsweetened applesauce
  • 3 TB avocado
  • 3 egg whites, lightly beaten
  • 1 tsp. vanilla extract
  • 1 cup whole wheat flour, sifted
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 TB pumpkin pie spice (or substitute with 1 tsp. cinnamon, 1/4 tsp. nutmeg, 1/4 tsp. ginger)
  • 3 TB granulated stevia (or your favorite sweetener)
  • 1/4 tsp. salt

Frosting:

  • 1/2 scoop vanilla protein powder
  • 1/4 cup nonfat Greek yogurt
  • 1/4 cup reduced-fat cream cheese
  • 3 TB granulated stevia (or your favorite sweetener)
  • 1 tsp. vanilla extract

How to Prepare:

  • 1. Preheat oven to 350 degrees.
  • 2. Put a baking cup into each mold in a six-cup jumbo muffin pan. Set aside.
  • 3. In a large mixing bowl, blend pumpkin, banana, applesauce, avocado, egg whites, and vanilla until smooth and fluffy. Add whole wheat flour, baking powder, cinnamon, pumpkin pie spice, stevia, and salt and mix until a smooth batter is formed.
  • 4. Evenly scoop the batter into each of the six cups and bake in the oven for approximately 30 minutes, or until a knife inserted in the center of the cupcake comes out clean and the tops are golden brown.
  • 5. While the cupcakes are in the oven, put frosting ingredients into a mixing bowl and whip until the frosting is smooth and fluffy. Set aside. 6. Remove cupcakes from oven and let cool on a wire rack. Once cool, frost each cupcake and… Enjoy!”
